There are many ways to make cashew gravy, this is just one, based off of a recipe in Nancy Crosby’s cookbook, 7 Secrets, but different.
- 2/3 cup cashews
- 1 1/3 cup water
- 1 tsp onion powder
- 1/2 tsp salt
- In a blender, blend together cashews and water until smooth.
- Pour into a small or medium sauce pan, mix in onion powder and salt.
- Bring to a boil, stirring frequently.
- Reduce heat to medium and continue to cook for about 2-3 minutes, stirring frequently. Gravy should thicken as it cooks. If it is not thickening, you may want to continue to cook it for a couple more minutes.
