This is a delicious way to eat more lettuce.
There are many possibilities with peanut butter and lettuce sandwiches. You can choose whatever bread you want to use, and whatever kind of peanut butter or lettuce. For the healthiest results, you can also use organic or natural peanut butter and dark, leafy green lettuce, but I prefer iceberg. I recommend whole grain breads, too. I especially like 12 grain.
Spread a thick layer of peanut butter on both slices of the bread. Place several layers of lettuce, I like a thick layer of iceberg, and cover with the other slice of bread, peanut butter side down. Press firmly.
It’s delicious! Peanut butter tastes delicious on celery, so why not expect it to taste yummy on lettuce, too?
You could also sprinkle on some raisins (ants on a log is made by spreading peanut butter on celery and then placing raisins in a line along the top on the peanut butter, so this would taste delicious in a sandwich, too).
