Sandwich Tofu + Bonus Sandwich Recipes

I like to make this tofu for sandwiches during canvassing programs. It’ll keep a few days in the fridge. I often find myself making it fresh each morning, but it can be made ahead of time.

Ingredients:

  • 1 standard sized package of firm or extra firm (extra firm is best) tofu
  • oil
  • garlic powder
  • onion powder
  • paprika
  • sage
  • pinch of rosemary (optional)
  • salt (I recommend sea salt)
  • (optional) 1/2 onion or 1 small onion, peeled and sliced.

To make:

  1. Pour oil into frying pan or griddle and heat on medium heat.
  2. Slice tofu into 7-8 slices.
  3. Carefully place tofu and onions in frying pan. Watch out for splatter.
  4. Dash on seasonings, except salt.
  5. Sprinkle on salt.
  6. Cook for about 5-7 minutes or until tofu turns at least golden brown (I like mine brown and crispy on at least one side. Stir the onions (if using) often to prevent burning. Cook those until they are soft, and remove them early if necessary to prevent burning.
  7. Flip tofu. Dash on more seasonings and sprinkle on more salt.
  8. Cook for about 5 more minutes or until tofu turns at least golden brown on that side.
  9. Remove. Add immediately to sandwich(es) or keep in refrigerator for about 3-4 days.

This makes about 5-7 slices. I usually use 2 slices per sandwich, although for smaller sandwiches, 1 slice can be used. For subs, I might use 4 slices. 

Now, for the bonus sandwich recipes…

Sour Tofu Sub/Sandwich:

Ingredients:

  • 1-2 slices (sandwich) or 4 slices (sub) of sandwich tofu.
  • about 1/4 cup, give or take a little, sauerkraut (for sandwich), double for sub.
  • sauteed onions
  • Mustard (optional)
  • 2 slices of bread, 1 roll, or 1 sub/hoagie roll.

To Make:

  1. Layer sandwich : bread, tofu, onions, sauerkraut.
  2. Add mustard (if desired).
  3. Close sandwich with top of roll or other slice of bread.

Tofu Burger:

Ingredients:

  • 1-2 slices (sandwich) or 4 slices (sub) of sandwich tofu.
  • 1-2 slices of tomato, double for sub
  • 1-2 pieces of iceberg, romaine, or other lettuce, double for sub
  • sauteed or raw onion
  • If available, vegan mayo (recommended: homemade, vinegar-free vegan mayo) or mashed avocado and salt or mustard (recommended: homemade vinegar-free mustard), or oil with salt and herbs. (all optional)
  • 2 slices of bread, 1 roll, or 1 sub/hoagie roll.

To Make:

  1. If using, spread vegenaise or other spread onto both slices of bread.
  2. Layer: Bread, tofu, lettuce, tomato, onion.
  3. Close with other slice of bread.

Tofu Pepper Sandwich:

  • 1-2 slices (sandwich) or 4 slices (sub) of sandwich tofu.
  • 1-2 slices of roasted red pepper, double for sub
  • sauteed onions
  • 2 slices of bread, 1 roll, or 1 sub/hoagie roll.

To Make:

  1. Layer: bread, tofu, onions, pepper
  2. Close with other slice of bread

And of course, you can make many more different kinds of sandwiches with this, too.
