Fig Spread

Inspired by a fig spread recipe by Fri, my former room mate from the short time I spent in Canada.

  • 1 cup dried figs
  • 1 cup pitted dates
  • 1/2-1 cup coconut cream/coconut milk

To Make: Combine all ingredients in a blender. Blend until smooth.

This is delicious to spread on toast, pancakes, waffles, bagels, and more, and will keep for over a week in the fridge. It actually seems to get a bit sweeter with each passing day. I’m not sure exactly how long it will keep, though. I originally made this with cinnamon, but it’s also delicious without. I can even eat this right out of the blender or in a bowl.

Try it with 1/2-1 cup of dried cranberries blended into the mix. It’s extra delicious.
