Was out of Earth Balance, so made this healthy, sweet alternative to spread on my cranberry pumpkin bread this morning. It can be stored in the fridge for a few days, but does go brown, so it’s best fresh.
- 1 banana (ripe enough, doesn’t have to be brown, though)
- 1 Tbsp coconut oil
- lemon juice
To Make: Peel banana and drop it into the blender. Squirt on a little lemon juice (I used a fresh lemon), add the coconut oil (preferably in a liquid state), and blend all together until smooth.
