What a pleasant way to cool off! The texture was like mousse.
This filled my glass (actually plastic) 3-4 times, so it made at least 3-4 cups. Keeps well in the fridge. I don’t know for how long, because I drank the leftovers the next day.
- 1 13.5 can of coconut milk (Slightly bigger or slightly smaller can is OK. The more natural the ingredients and the heavier the cream.)
- 6-7 Tbsp Roma or similar instant herb coffee
- 1/2 cup carob powder
- 1/4-1/2 cup maple syrup
- around 1 average sized tray of ice cubes (or at least 2 cups of ice cubes)
To Make: Combine all ingredients in a blender and blend on high until the ice is all crushed and the ingredients are thoroughly combined. Shouldn’t take long.
