Tomato-Basil Tofu Scramble

Crumble 1 block of tofu.

Mix in two pinches of turmeric and 2-3 pinches of salt. Dash in some dried basil (1 Tbsp) and some dried chervil leaves and marjoram (about 1  tsp each).

Mix in about 1/4-1/2 cup of soy or almond milk (you can also use water instead) and about 1/4 cup of nutritional yeast flakes.

Add 1 Tbsp of coconut oil, 1-2 diced tomato(es), 1/2 cup sliced mushrooms, 1/2-1 cup spinach and 1/4 cup sliced onion.

Bring everything to a boil. Cook, stirring occasional, until all or most of the liquid is absorbed and the excess has evaporated and the onion and mushrooms are soft (if they are not soft, and a little more liquid.

Serve hot.

Enjoy with toast ^_^
