Seasoned Crackers

I was just thinking of some foods that I made in the dorm at school. Thinking about frying tomatoes and leftover lunch meat got me thinking about what I did with some crackers that my friend sent me in a lovely care package. I liked to eat them with peanut butter. These were Carr’s whole wheat crackers, but this snack was inspired by my ste-grandmother (my stepmother’s mother) who had doctored up some saltines with different herbs and seasonings. They were delicious. You can use any type of cracker, but I recommend the healthiest choice you can find, preferably something whole wheat or whole grain.

Carob Dipped Pretzels

Of course, this carob dip can be used for other delicious snacks, too. I got tired of dipping pretzels and began dipping frozen cherries. Then, I got tired of that and dumped the cherries into the pot to make some candy bars. If I had continued with pretzels, they would have filled 3 or 4 cereal bowls, each containing about 2 cups of mini-pretzels. But, I switched over to cherries, so I had two cereal bowls full of mini carob-dipped pretzels, three large heart-shaped cherry carob candy, and at least 5-7, give or take a few, carob-dipped cherry pairs on toothpicks…

Baked Tortilla Chips

I’m not a big fan of corn tortillas. I like taco shells and tortilla chips, but corn tortillas are just too dry and yet too floppy and too easily broken, and they just have this kind of raw taste to them that I don’t care for. I like them when they’re toasted a bit more, dipped into beans with fresh salsa or hot sauce, and vegan cheese and vegan sour cream, but I still prefer tortilla chips or corn chips. My friends also fry them in a frying pan and add tomato sauce, and served with black beans and scrambled tofu, they’re pretty tasty. Other than that, I just kind of tolerate them. As we were packing up to head for home after a scholarship project, two of my friends gave me some leftover corn tortillas, and they were going to expire in two days…
